Edward Lee

Board of Directors

Edward Lee is a founder and Chairman of the Board of Directors of the Louisiana Shrimp Museum. He has been in the shrimp processing business since 1979; first as CEO and co-owner of Lafitte Frozen Foods Company, and now as the President/CEO and sole owner of Louisiana Shrimp Packing Company. Edward is also the President/CEO and owner of Gulf Marine Products Company, a crawfish distributor, and was a founding board member of MetroBank in Houton, TX. Edward attended Barodu Medical College in Vadodara, India, and received a Certificate of International Business Management from New York University.


Acy Cooper Jr

Board of Directors

Acy Cooper Jr. is a fourth‑generation commercial shrimper based in Venice, Louisiana. He began working on the water at age 15 and now has over 50 years in the industry. A well‑known figure in the shrimping community, Cooper is the president of the Louisiana Shrimp Association. He advocates for local shrimpers on both state and federal issues, like tariffs, competition from imported shrimp, and coastal restoration policies.

Chelsea Fitzgerald

Board of Directors

Chelsea Fitzgerald is a partner at New Orleans law firm, Longwell Riess, where she practices commercial real estate and tax credit transactional law. Originally from West Palm Beach, Florida, Chelsea has lived in New Orleans for 10 years and loves to spend time hiking outdoors, visiting local parks, and gardening. Chelsea is an amateur boil mistress and regularly boils crawfish for friends and nonprofit fundraisers. Chelsea’s favorite food is shrimp scampi and Louisiana seafood is one of her most treasured things about living in New Orleans. She loves to grill shrimp and oysters with her husband, Sam.

Jesse Murdock

Executive Director

Jesse Murdock is a founder and Executive Director of the Louisiana Shrimp Museum. Jesse was a deckhand on a shrimp boat while in high school and has worked closely with Edward Lee, Chairman of the Board of Directors of the museum, in the shrimp processing business for the last several years. Prior to that, Jesse's professional experience is primarily in corporate development and private equity. He is currently the CEO of Segnette Oyster Company LLC and CFO of Bodayga LLC, an SaaS start-up company.
